Botillo del Bierzo IGP

Only suitable for adventurous people. Discover “El Bierzo” with the most deeply rooted product in the hearts of León people.

Let yourself be surprised by a product that you will only find in our region. An original plan for a family get-together in winter. Add some cabbage, potatoes and chorizo to get the perfect recipe!

We chop some pork ribs and tail. They are marinated in Paprika de la Vera, salt and garlic and stuffed into a special casing called “ciego”. Then, it is smoked and cured for some days. It is necessary to cook it for around two hours before consuming it.

BOTILLO DEL BIERZO
INGREDIENTS FOR 4 PEOPLE

 

1 Botillo del Bierzo (1,200 Kg approx.)

4 fresh sausages (Chorizos)

1 Cabbage

4 Potatoes

RECIPE

 

The Botillo is covered with water and cooked in a large saucepan on a low heat. Since it beginsto boil, it cooks between 2 hours and 2 and a half hours.

Forty-five minutes before the end of the cooking time add the chopped cabbage, and half an hour before the end of the cooking time add the peeled potatoes
